This steak comes from the front of the short loin. Therefore it has a small tenderloin on one side of the T-shaped bone. On the other side is a longer steak that is a Strip steak if cut from the bone. Because this steak has a bone in it, that adds to its juiciness and the flavor when grilled. Best grilled and served rare. Four to five steaks per pack. Australian raised grass-fed goat.
