Economical, moderately tender roast. Can be cooked long and low in water in a crock pot. Properly prepared (roasted to an internal temperature of 135 degrees) it will be well received if sliced thin when served. Purchasing beef fat or suet to slice thin and cover the roast while it is cooking will improve flavor and even nutrition. U.S. raised grass-fed beef.
