Large flat-shaped grass-fed roast typically 2" to 2.5" thick cut from the leg. It is best prepared in a crock pot or cut it up for stew meat. It's not tender enough to cook with dry heat. When cooked in a crock pot, before serving, ladle some juice over the meat before serving. This is an excellent low cost and nutritional roast. U.S. raised grass-fed beef.
