Large flat-shaped buffalo roast typically cut 2' to 2.5" thick from the leg. It has a round marrow leg bone in it. It is best prepared in a crock pot or cut it up for stew meat. It's not tender enough to cook with dry heat. After cooked in a crock pot, scoop the marrow out of the bone and stir it back into the juice. Then ladle some juice over the meat before serving.
