Tso's Chicken Wings Breasts etc

A tasty main course that’s a sure winner.

Ingredients:

3 lbs Omega-3 Chicken Wings, Tenders, Thighs, or Drumsticks
2-3 Tbsp. Grass-Fed Butter melted
1 c Coconut Flour
2 Tbsp. Corn Starch
2 tsp Kosher Real Salt
1 tsp Black Pepper
2 tsp Garlic powder
2 tsp Smoked Paprika
1 to 2 Tbsp. Cayenne pepper

Instructions:

1. Preheat your oven to 400°F. Line each baking sheet with foil and fit them with wire racks.
2. In a large bowl, toss the chicken in melted butter.
3. In a bowl mix all dry ingredients. Dip each butter-coated piece of chicken in the dry mixture.
4. Arrange the coated chicken in a single layer on the wire racks.
5. Bake the chicken for about 40 minutes until cooked through and it is browned and crispy.
6. For extra-crispy chicken, lower the oven temperature to 170°F and keep the chicken in the oven for 30 to 60 more minutes.

Tso Sauce:

⅔ c Soy Sauce
2 c water
4 Tbsp. Rice Vinegar
4 Tbsp. Stevia or Honey
2 Tbsp. Hoisin sauce
4 Tbsp. sugar-free Ketchup
2 Garlic Cloves minced
1 tsp Red Chili flakes

Instructions:

1. Combine all of the sauce ingredients, but only one clove garlic, in a saucepan over medium heat.
2. Bring to a simmer and reduce heat to low, stirring for five to ten minutes.
3. Once thickened, remove from heat and let cool.

I serve the sauce on the side so the chicken stays crispy.
