A very elegant meal that is easy and full of flavor.
Ingredients:
4-6 Omega-3 Chicken Breasts pounded out to quarter-inch thick
4-6 slices Roasted Red Peppers
8-10 slices Omega-3 Pork Canadian Bacon or Deli Ham Slices
10 oz Cream Cheese, or Feta or Ricotta Cheese
1 c Chopped Spinach
4 tsp Macadamia Nut Oil
1 tsp Italian Seasoning
2 Tbsp. Minced Garlic
½ tsp Garlic Powder
1 small Sweet Onion diced small
1 c White Mushrooms sliced thin
1 Tbsp. T-Coons Seasoning
Salt and Pepper
Optional: Omega-3 Pork Bacon to wrap around each chicken roll
Instructions:
1. Preheat the oven to 400°F.
2. Set out a large rimmed baking sheet and line it with aluminum foil and spray with oil.
3. Lay the chicken breasts out on a cutting board and cover with saran wrap and pound out to quarter-inch thickness.
4. Sprinkle garlic powder, seasoning salt and pepper on both sides of the chicken breasts.
5. In a frying pan sauté the onions untill almost clear, then add the mushrooms, minced garlic, and spinach. Season with Italian seasonings, salt, pepper and T-Coons. Set aside.
6. Lay two slices of Canadian bacon or the deli ham slices on each chicken breast.
7. Pat dry the roasted red bell pepper. Place the red bell pepper over the Canadian bacon or ham slices on each slice.
8. Place about one to two tablespoons of spinach, mushroom, and onion mixture on the roasted bell peppers.
9. Put equal amounts of cheese on top of the spinach mixture.
10. Do your best to roll the chicken into a roll. Drizzle the tops with Macadamia Nut Oil. Then sprinkle with Italian seasoning, garlic powder, and additional salt and pepper.
Optional: wrap each roll with bacon. Or you can use either toothpicks or turkey twine to hold each roll closed.
11. Place the chicken roll seam-side-up (so cheese doesn’t melt out) on the prepared baking sheet.
12. Bake for 20-25 minutes. Rest for five minutes and serve with your favorite dish.
