I loved this as a kid when my grandmother made it. It's healthy and it's great as a snack, dessert or served with breakfast.
Ingredients:
4 cups strawberries (washed and dried)
4 cups rhubarb (leaves removed and stalks washed)
3 Tbsp. honey or more for sweetness
1 tsp vanilla
1 Tbsp. water
Instructions:
1. Strawberries: remove stems and cut into quarters.
2. Cut rhubarb into 1 to 2 inch pieces.
3. Combine all ingredients in a saucepan, bring to a boil. Once it starts to boil turn down to medium-low heat until reduced and thickened and the fruit has softened, about 15 to 20 minutes.
4. Remove from heat. Serve either warm or cold.
Enjoy for snack or dessert.
