A great meal with great flavor that the entire family will enjoy.
Ingredients:
2 lb Grass-Fed Beef Flat Iron or Flank Steak—cut each steak in half
2 Tbsp. Macadamia Nut Oil
3 Tbsp. Garlic, chopped
1 large Sweet Onions, diced small
2 c Mushrooms, thinly sliced
½ Tbsp. Kosher Salt
½ Tbsp. Ground Black Pepper
1 Tbsp. T-Coons Seasoning
4 oz Baby Spinach, chopped
8 slices Provolone Cheese
Instructions:
1 Preheat oven to 350°F (175°C). Cook Time is 35 minutes.
2. Heat one tablespoon macadamia nut oil over medium-high heat.
3. Add the garlic, onions, mushrooms, salt, and pepper in the pan and cook until the onions are opaque. Remove from heat and set aside.
4. Lay the steak of choice on a cutting board. Cut each steak length wise.
5. Add T-Coons, salt and pepper on both sides.
6. Place a slice of provolone cheese on the steak.
7. Spoon garlic, mushroom and onion mixture on top, spread it evenly across the cheese.
8. Sprinkle the chopped spinach on top, followed by one more slice of provolone.
9. Press down lightly to compress the spinach.
10. Roll up steak tightly. Use six toothpicks or roast/turkey tie to secure the steak roll.
11. Heat one tablespoon macadamia nut oil in the same pan used earlier, over high heat.
12. Sear the steak rolls on each side.
13. Bake for 10–15 minutes, until medium rare.
14. Remove the toothpicks and tie and cut into one to two inch pieces (optional) then serve!
