Stew in the winter. Heck yes! Especially when it’s filled with great meat and vegetables. All will enjoy.
Ingredients:
2 lbs Grass-Fed or Omega-3 stew meat from any critter. Lot’s of healthy options!
Grass-Fed Beef Tips (Stew Meat)
Omega-3 Chicken tenders/thighs/legs cut up (White or Dark Meat)
Turkey tenders/thighs/legs cut up (White or Dark Meat)
Omega-3 Pork Tips (Stew Meat)
Grass-Fed Buffalo Stew Meat
Grass-Fed Lamb Bone-In Stew Meat
Grass-Fed Lamb Boneless Lamb Stew Meat
Grass-Fed Goat Bone-In Stew Meat
Grass-Fed Cubed Goat (Stew Meat)
2 cups Grass-Fed or Omega-3 Broth
Beef Broth for beef, buffalo, lamb, and goat
Chicken Broth for chicken
Pork Broth for pork
Turkey Broth for turkey
12 cherry tomatoes cut in half
1 each: red and orange bell peppers, chopped bite-size pieces
8 white mushrooms sliced
2 ribs celery, sliced
2 large carrots, sliced
1 or 2 large/medium sweet potatoes cut into large, bite-size pieces
1 to 2 large/medium white or red onion, chopped
4 large garlic cloves, minced
2 Tbsp. Worcestershire sauce
2 tsp Redmond sea salt
1½ tsp ground black pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp dried oregano
1 Tbsp. T-Coons
1 large broccoli floret cut into bite-size pieces
and/or
1 large cauliflower floret cut into bite-size pieces
1 to 1½ cups red wine
Optional Ingredients:
1 jalapeno diced up
6 asparagus cut into one-inch pieces
1 Tbsp. of either cayenne or paprika for spicy stew
Vegetable broth can be substituted for meat broths
12 oz Grass-Fed or Omega-3 Bacon, cooked crisp and crumbled to be served as a garnish
1 or 2 zucchini and/or yellow squash sliced
Directions:
1. Use a large crock pot and cook on low setting or large pot on a stove set to cook on medium/low heat (do not boil).
2. Add the broth, meat, red wine, bell peppers, celery, carrot, onion, garlic, sweet potatoes, Worcestershire sauce, salt, pepper, garlic powder, onion powder, T-Coons, dried oregano, and jalapeno. Also add optional seasonings at this time.
3. When about halfway cooked add broccoli or/and cauliflower, mushrooms, asparagus, tomatoes, zucchini, and squash.
4. Cover and cook on low six to eight hours, stirring every hour.
Serve with chopped raw spinach and cover with bacon bits. Put spinach in a bowl and cover with stew. Do not cook spinach in the stew because it will deteriorate. An option is to serve over spiral zucchini or cauliflower rice.
