A great sauce for your Gyro or you can put on your salad.
Ingredients:
1 c plain Greek yogurt sugar free
1 c shredded English cucumber
1 lemon, zested + 1 Tbsp. juice
1 Tbsp. macadamia nut oil
1 Tbsp. fresh chopped dill
1 clove garlic, minced
¼ tsp salt
¼ tsp pepper
Directions:
1. Shred the cucumber with a cheese grater. Zest and juice the lemon. Then chop the dill and garlic. Squeeze all juice out of your shredded cucumber.
2. Set out a medium-sized mixing bowl. Add the yogurt, shredded cucumber, lemon zest, one tablespoon lemon juice, olive oil, chopped dill, garlic, salt, and pepper.
3. Puree the mixture. Then salt and pepper as needed. You can also add additional lemon juice if you so desire.
Serve on a Gyro or salad and enjoy.
