Orange Chicken Stir Fry

A flavorful meal that you all will enjoy.

Ingredients:

Chicken Parts:
4 Omega-3 Boneless Skinless Chicken Breasts cut into bite-size pieces
3 Eggs whisked
2 Tbsp. Cornstarch
⅓ c Coconut Flour
Seasoning Salt
Macadamia Nut Oil

Orange Sauce:
1 c Orange Juice
½ c Honey
2 Tbsp. White Balsamic Vinegar
2 Tbsp. Soy Sauce
¼ tsp Ginger
¼ tsp Garlic minced
½ tsp Red Pepper Flakes
Orange Zest from one orange
1 Tbsp. Cornstarch

Stir Fry Vegetables:
Juice from one Orange
2 Tbsp. Soy Sauce
1 Bell Pepper of each color cut into bite-size pieces
1 White Onion cut into half-moon shaped slices
1 c Spinach
1 c Asparagus cut into bite-size pieces

Instructions:

Orange Sauce:
1. In a small sauce pan add orange juice, honey, vinegar, soy sauce, ginger, garlic, and red pepper flakes. Heat for three to five minutes.
2. In a small bowl, whisk together one tablespoon of cornstarch with two tablespoons of water to form a paste.
3. Add paste to orange sauce and whisk together.
4. Continue to cook for five to seven minutes, until the mixture begins to thicken. Once the sauce is thickened, remove from heat and add the orange zest.

Stir Fry Vegetables:
1. In medium sauce pan add the soy sauce and juice from the orange.
2. Add all peppers, onions, and asparagus to the liquid.
3. When Vegetables are almost al dente. Add spinach.
4. Keep on warm until spinach is al dente then remove from heat. Liquid is no longer needed.

Chicken:
1. Place coconut flour and cornstarch in a shallow bowl. Add a generous pinch of Seasoning Salt. Mix.
2. Whisk eggs in shallow bowl.
3. Dip chicken pieces in flour mixture then into egg mixture and then back to flour mixture. Place on plate.
4. Heat two to three inches of oil in a large sauce pan on medium-high heat.
5. Work in batches, cooking several chicken pieces at a time. Cook for two to three minutes, turning often until golden brown.
6. Place chicken on a paper-towel-lined plate. Repeat.
7. To plate up: cauliflower rice on plate first or noodles, place vegetables on top, place chicken on top of vegetables. Pour sauce over all ingredients.
