A great flavorful side dish for any meal that all will enjoy. This recipe is easy to double for a large gathering.

Ingredients:

6 to 8 strips Omega-3 bacon. If you love bacon use a pound.
½ medium white onion diced
8 oz. fresh baby spinach
Salt & pepper to taste
½ red pepper diced
6.5 ounces can mushroom (freshly sliced mushrooms)

Instructions:

1. Cut the bacon into pieces and fry in a large skillet until crispy.
2. Transfer the cooked bacon to a paper towel. Leave about three to four tablespoons of bacon fat in the pan and reserve the rest for later use.
3. Add the onion and red bell pepper and sauté over medium heat until it's softened. Add mushrooms and cook till soft.
4. Add in about half of the spinach and toss. As it wilts add in the rest of the spinach, in a large handful at a time (keep tossing), until most of it is wilted while some of the spinach is still whole but cooked. This will take about five minutes.
5. Add half of the cooked crispy bacon and toss. Season with salt & pepper for taste. And then, right before serving, put the rest of the crispy bacon on top.
