Apple Bacon Pork Loin 2

A great easy meal the entire family will enjoy. This recipe is served with salad and sliced squash with seasonings and Parmesan cheese.

Ingredients:

2-3 lb Omega-3 Pork Tenderloin
Salt and pepper to taste
8-10 slices Omega-3 Pork Bacon thin cut, cooked till crispy and crumbled
½ medium Apple cubed
4 Garlic cloves
1 Tbsp. Dijon mustard
1 Tbsp. Balsamic Vinegar
1 tsp fresh Thyme

Directions:

1. Preheat oven to 425°F.
2. Pat dry the pork with a paper towel and sprinkle with salt and pepper.
3. Cook bacon until crispy and break into small pieces.
4. Saute the cubed apple pieces until soft. Put soft apples, garlic, mustard, balsamic vinegar, and thyme in the food processor and process until they become a thick sauce.
5. Coat the top and sides of the pork loin with the apple mixture.
6. Carefully roll the pork loin in the bacon crumples.
7. Roast the pork loin for 30-40 minutes, until the internal temperature reaches 145°F. Keep an eye on the pork loin roast because we don’t want to over cook it.
8. Rest for five minutes, then cut into slices to serve. Serve with the apple/bacon/pork juices.
9. Serve with your favorite side.
