Egg, Cheese, and Bacon Waffles

A healthy breakfast waffle served with sugar-free strawberry or raspberry jam and Omega-3 Pork Bacon.

Ingredients:

6 eggs
3 cups shredded grass-fed cheddar cheese or grass-fed mozzarella
4 scallions, finely chopped
3 crispy Omega-3 Pork Bacon strips crumbled

Directions:

1. Preheat a nonstick, mini-waffle iron to medium-high heat.
2. In a medium bowl, stir together eggs, shredded cheese, scallions, and cooked bacon crumbles.
3. Pour mixture into waffle iron and cook for about five minutes, or until the egg is fully cooked. Do not over pour the waffle iron.
4. Repeat until you've used all of the "batter."
5. Serve plain, with hot sauce, maple syrup, honey butter, red pepper flakes, sugar free jam, or any of your favorite toppings!
