Mexican Chicken Tenders/Breast


A great easy recipe the whole family will devour.

Ingredients:

2 large Omega-3 Chicken Breasts - Skinless and Boneless

Marinade
¼ c Olive Oil
4 tsp Taco Seasoning
1 tsp Salt
1 tsp Honey
3 cloves Garlic
1 lime Zest
1 orange Zest

Directions:

Filleting Chicken Breast
1. Pat the chicken breast dry.
2. Using a cooking mallet, pound two chicken breasts to a thickness of ⅓ inch.
3. Cut each breast into chicken tender strips.

Marinate the chicken:
1. Pour the olive oil into a non-metallic dish, and add in the taco seasoning, salt, and honey.
2. Crush or grate the garlic and add it to the marinade.
3. Grate the zest of the lime and orange
4. Cut the zested lime and orange in half and add two tablespoons of orange juice (half the orange) and two tablespoon of lime juice (the whole lime)
5. Add the chicken strips and turn to coat.
6. Cover and marinate in the refrigerator for 20 minutes or six to 24 hours.

To cook the chicken:
1. Place a heavy-based frying pan over medium-high heat.
2. Pour the chicken and the marinade and cook on one side without moving for four minutes.
3. Flip the chicken and cook for a further three to four minutes until cooked through.

Serve with your favorite side and salad.
