A tender and succulent piece of meat that will impress your family and guests!
Ingredients:
For the meat:
3 pounds Grass-Fed Goat Leg with the bone or Grass-Fed Leg of Lamb
3 cloves of garlic cut into little sticks
3 sprigs of rosemary
Juice from one lemon
¼ cups macadamia nut oil
Salt and pepper to taste
2 Tbsp. dried oregano
2 c white wine
3 sweet potatos peeled and cut into bite-size pieces
3-4 carrots peeled and diced into bite-size pieces
2 white or red onions cut into one-inch pieces
For the glaze:
9 Tbsp. honey
½ tsp ground cumin
½ tsp fennel seeds ground
Pinch of seasonal salt and pepper
1 Tbsp. macadamia nut oil
Instructions:
1. Preheat your oven to 350°F.
2. Rub the meat with seasoning salt and pepper. Make small incisions throughout the meat and put in the cut one stick of garlic and some rosemary.
3. Place the meat, potatoes, onions, and carrots in a pan and add any rosemary that was left along with the white wine, lemon juice, macadamia nut oil. Then sprinkle with the oregano.
4. Cover with foil or glass lid and bake for two hours.
5. Combine all the ingredients for the glaze in a bowl, microwave for 30 seconds and mix well.
6. Remove pan from oven and brush the meat with half of the glaze. Return to the oven and bake uncovered for at least 20 more minutes or until the surface of the meat is deep brown and you can see the meat separating from the bone.
7. Remove from oven, brush meat with the rest of the glaze and let it rest for 10 minutes covered before serving.
Optional: fresh broccoli florets or cauliflower
