A great easy meal for the family and easy to double or triple for a party. Every one will enjoy this chicken.
Total cook time three hours
Serves three to four people
Ingredients
2 pounds boneless Omega-3 Chicken Breasts Skinless
Salt and pepper
1 cup of honey
1 cup low sodium soy sauce
½ cup no sugar ketchup
4 Tbsp. macadamia nut oil
2 cloves minced garlic
1 medium onion
½ tsp red pepper
¼ cup gluten free Jack Daniels Tennessee Whiskey or Maker's Mark (optional)
Preparation
1. Sprinkle chicken with salt and pepper and then cut it into one-inch cubes and place them in the slow cooker
2. In a mixing bowl add the honey, soy sauce, ketchup, oil, garlic, onion, bourbon (optional), and red pepper flakes. Stir well to combine. Pour over the chicken in the slow cooker.
3. Mix chicken in with the sauce and cook for three to four hours on low or 1½ to 2½ hours on high.
4. When chicken is done remove from crock pot and serve with butter cubed sweet potatoes, cauliflower rice, cheesy asparagus, or your favorite salad.
