We can have pizza calzones again. Yes, almond flour or coconut flour crust, Grass-Fed and/or Omega-3 meats, and Grass-Fed cheeses. This is a great party item or appetizer.
Ingredients
Pizza calzone crust:
4 cups almond flour or coconut flour
2 tsp kosher salt or sea salt
2 tsp baking soda
2 tsp garlic powder
2 large eggs
Pizza calzone ingredients:
½ pound of Grass-Fed or Omega-3 meat (Take your pick)
● Grass-fed/Omega-3 Pepperoni
● Smoked Omega-3 Pork Bacon
● Omega-3 Ground Pork Chorizo
● Omega-3 Ground Pork Italian
● Omega-3 Chicken Italian Sausage
● Grass-fed Beef Summer Sausage Jalapeño and Cheese
● Grass-fed Beef Jalapeno Cheese Sausage
● Grass-fed Beef Bratwurst
2 cups sugar-free marinara sauce
16 half-inch cubes of Lykens Valley Creamery Raw Milk Grass-Fed Meadowrella Cheese.
½ cup ricotta or cottage cheese optional
Preparation
Pizza calzone crust:
1. In a large bowl mix all dry ingredients together. In separate bowl whisk the eggs.
2. Mix eggs into the dry ingredients and then knead till dough is smooth.
3. Use parchment paper to roll out the dough. Cut dough into 3.5- to 4-inch circles.
Stuffing Dough Circles:
1. Put one to two tablespoons of marinara sauce on the center each circle of dough.
2. Add one tablespoon ricotta or cottage cheese optional.
3. Add one cube of cheese and slices of preferred meat.
4. Cut to length some kitchen twine/thread.
5. Fold corners of dough over the top as if making a dumpling.
6. Use the twine to tie up the pizza calzone in order to keep it closed. Do not tie the twine to tight, just tight enough to keep the wrap closed.
7. Sprinkle with garlic powder, Parmesan cheese, and/or Italian seasonings optional.
8. Cook at 400° F for 15 to 20 minutes.
