Flavorful Pork Loin Roast
Wow, this is so tender and juicy that everyone wanted more. And on the plus side, the flavor was to die for.

Ingredients:

For the Pork Loin:
3-pound Omega-3 Pork Loin Roast
1 Tbsp. macadamia nut oil

For the Rub:
1½ tsp paprika
1 tsp garlic powder
1 tsp onion powder
½ tsp dried thyme
½ tsp dried rosemary
1 Tbsp. salt
½ tsp ground pepper

For the Glaze:
4 large cloves garlic minced
½ cup honey
3 Tbsp. soy sauce
1 Tbsp. Dijon mustard
1 Tbsp. macadamia nut oil

Instructions:

1. Pat dry pork loin with paper towels.
2. In a small mixing bowl combine paprika, garlic powder, onion powder, thyme, rosemary, salt and pepper.
3. Lightly spray pork loin with cooking spray.
4. Rub the spice mix all over the pork loin.
5. Heat oil over medium heat and sear the pork loin until browned on all sides; about three to five minutes per side. Transfer pork loin to crock pot dish.
6. In a bowl, combine garlic, honey, soy sauce, mustard, and oil; whisk until well combined. If too thick, add a bit more oil or soy sauce.
7. Pour prepared sauce over the roast; cover and cook on LOW for four to five hours
8. Remove crock pot and loosely cover meat with foil; let rest 10 minutes. Cut the pork in slices and put the juice from crock pot over the meat.

Serve with veggies and a salad.

Enjoy.
