Buffalo Chicken Dip is a great party favorite that has lot of uses. Watch out though, it does have a kick.
Ingredients:
3 cups shredded, cooked Omega-3 Chicken
½ cup Hot Sauce
¼ cup homemade ranch dressing
¾ cup plain sugar free Greek yogurt
1¼ cup grass-fed sharp cheddar cheese shredded
⅓ cup grass-fed mozzarella cheese shredded
2 cloves garlic minced
½ tsp onion powder
3 Tbsp. green onion chopped
2 Tbsp. crumbled blue cheese (sub grass-fed feta cheese)
Directions:
Oven:
1. Preheat oven to 350°F. Arrange oven rack to the middle of the oven.
2. In a large mixing bowl (using a hand mixer or electric mixer) combine shredded chicken, Hot Sauce, homemade ranch dressing, plain sugar free Greek yogurt, one cup shredded grass-fed cheddar, grass-fed mozzarella cheese, garlic, and onion powder. Mix until smooth.
3. Pour buffalo chicken dip into a casserole dish and sprinkle with remaining ¼ cup of shredded sharp cheddar cheese.
4. Bake, uncovered, for 25 minutes or until cheese is melted and dip is bubbly.
5. Remove from oven and top with chopped green onion (or chives), crumbled blue cheese or feta.
Slow cooker:
To make in a slow cooker instead of the oven, add all ingredients (except blue cheese/feta and green onion) to slow cooker and cook on HIGH for one to 1½ hours or LOW for three to 3½ hours. Once bubbly and hot, top with blue cheese and green onions.
Serve buffalo chicken dip with almond flour/coconut flour tortilla chips, carrot sticks, celery, cucumber slices and more.1
