An easy casserole that the entire family will enjoy. It can work with any ground meat product such as beef, chicken, pork, buffalo, lamb, or goat.
Ingredients:
1 lbs ground meat of your choice (beef, chicken, pork, buffalo, lamb, goat)
1 white onion chopped
1 taco seasoning packet (for meat) and three tablespoons of taco seasonings for the sour cream mixture
1 lbs refried beans
10.5 fl oz condensed cream of chicken soup or cream of mushroom soup (don't dilute).
¾ c sour cream or Greek yogurt
8-10 large tortillas cut into quarters
2 c grass-fed mild cheddar shredded
1 c grass-fed pepper jack cheese shredded
¼ c fresh cilantro chopped
1 lime juice optional
1 can Rotele drained
10 fl oz can red enchilada sauce
Optional items: black olives and jalapeños
Instructions:
1. Cook the selected ground meat and onion in a pan until it is cooked through and the onion is tender.
2. Drain and stir in the refried beans and taco seasoning package.
3. Squeeze the lime juice over the ground meat mixture, add the cilantro, and mix and set aside.
4. Spray a 13" x 9" baking dish with no stick cooking spray.
5. In a large bowl mix together the soup and sour cream.
6. Add the three tablespoons of taco seasoning and one tablespoon dried cilantro to the sour cream mixture. Combine all ingredients.
7. Spoon some of the sour cream mixture in the bottom of the baking dish.
8. Add a layer of tortillas. Lay them with the flat, cut sides to the sides of the dish. Cover entire bottom of dish with the tortillas.
9. Spread a layer of the ground meat mixture over the top of the tortillas.
10. Sprinkle on half of the can of Rotele.
11. Top with a cup of cheese—mixed.
12. Repeat layers, starting with sour cream mixture, and finish with the cheese.
13. Preheat oven to 350°F.
14. Bake for 20 minutes or until heated through.
15. Let stand for five to 10 minutes before serving.
