A great healthy recipe that combines acorn squash and sausage/bratwurst. This great recipe can be served for the holidays or a main dish.
Ingredients
2 medium acorn squash
Macadamia nut oil
Sea salt
Black pepper
1 pound uncooked bratwurst remove skin
This can be any kind of grass-fed bratwurst such as Beef, Pork, or Buffalo.
1 medium white onion diced
4 cloves garlic minced
2 tsp fresh rosemary minced
2 tsp fresh sage minced
1 tsp fresh thyme leaves
1 tablespoon fresh parsley minced
2 cups cauliflower rice
2 tablespoon grass-fed milk or coconut milk
½ tsp crushed red pepper
2 cup fresh white mushrooms chopped
Optional:
1 cup chopped spinach
Grass-fed cheese sprinkled on top
Preparation
1. Pre-heat oven to 400° F and line baking sheet with parchment paper. Wash acorn squash and cut in half. Scoop out seeds with a spoon.
2. Brush oil on the parchment paper and the baking sheet. Sprinkle sea salt onto the oil. Place each acorn squash with cut side down. Cook for 25 to 30 minutes until it feels soft when top pressed in.
3. In large skillet over medium high heat. Add one tablespoon oil. Cook sausage untill done and break up the lumps into small crumbs. Remove to a plate/bowl.
4. Lower heat to medium and add one tablespoon of oil to skillet. Add onions and cook till soft, about five minutes.
5. Add mushrooms and garlic and sprinkle with sea salt and pepper. Optional: add one cup chopped spinach. Cook for three minutes and then add all seasonings. Cool for four minutes.
6. Add cauliflower rice and milk (optional for moisture) stir occasionally and add sea salt, pepper and crushed red pepper (optional for heat) for a few minutes. Add cooked sausage and mix in with rice and onion mixture and cook for two to three minutes.
7. Pre-heat broiler on high. Keep squash on baking sheet cut side up. Fill squash center with mixture. You’ll need to press down on the stuffing to fill it the space. You may have some left over to serve with another meal.
8. Place squash under broiler for two to four minutes untill browned and the acorn squash is warmed up.
Optional: sprinkle with your favorite grass-fed cheese.
Serve with your favorite salad.
