I wanted a one-pan meal that included vegetables and sausages. So I put this together and all my friends were amazed how good and easy it was. And, there’s only one baking dish to clean!
1 large sweet potato
½ head of cabbage or broccoli
2 large bell peppers (any color)
1 medium onion cut
8 cloves garlic minced
½ Tbsp. garlic powder
Salt and pepper to taste
1 tsp dried rosemary
2 to 4 Tbsp. olive oil
1.5 pounds uncooked bratwurst, knackwurst, or Italian sausage
Pre-heat oven to 400 degrees
1. Peel sweet potato and cut into 1 inch pieces
2. Cut bell peppers into 1 inch pieces
3. Cut onion into 1 inch pieces
4. Mince the 8 cloves of garlic
5. Cut broccoli or cauliflower into bite size pieces
6. In a bag put all vegetables and seasonings and garlic and oil and mix well
7. Pour vegetables onto sheet pan
8. Score each sausage link diagonally 4 or 5 times. This allows the juice to spill onto the vegetables.
9. Cook in oven for 40 minutes, until sweet potatoes are tender and meat is cooked to 160 degrees.
10. Broil for 2 to 3 minutes to crisp up the vegetables—this is optional
Serve with your favorite salad
