A healthy salmon dish that hit home.
Ingredients
1 cup cherry tomatoes halved
6 strips thick-sliced Omega-3 Pork Bacon chopped up
1½ cup baby spinach chopped
4 Wild-Caught Salmon Steaks (any variety)
Lemon pepper seasoning
½ cup Greek yogurt no sugar
3 small cloves minced or pressed
1 healthy pinch of sea salt
1 pinch cayenne pepper
1 to 2 Tbsp. lemon juice
½ tsp macadamia nut oil
Preparation
Dill sauce:
1. In bowl mix together: yogurt, garlic, sea salt, cayenne pepper, lemon juice, and oil.
2. Taste and adjust ingredients as needed.
Salmon Steaks:
1. Season salmon with lemon pepper seasoning. Cook in preheated skillet for four to five minutes per side or until fish flakes easily. Remove and keep warm.
2. In same skillet cook bacon till crispy.
3. Drain grease but leave two tablespoons or pork fat in the pan.
4. Add tomatoes to the hot pan. Saute until they soften.
5. Add chopped spinach and cook until it starts to wilt.
6. Add dill sauce and mix together.
7. Plate up salmon and spoon tomato spinach dill sauce over salmon and put crumpled bacon on top.
Serve with favorite salad. Enjoy.
