Bacon Ham Avocado Egg Bake

Avery healthy, tasty treat you will enjoy.

Ingredients:

1 large avocado, ripe but firm
1 to 2 Omega-3 bacon crispy crumbled
1 slice Omega-3 Deli Ham
2 small eggs
½ tsp salt divided
¼ tsp black pepper
1 tsp T-Coon Seasoning
Shredded grass-fed cheese of your choice
¼ tsp red pepper flakes (optional)
1 scallion chopped

Directions:

1. Preheat your oven to 450°F. Line a baking dish with foil for easy cleanup. (Use a small baking dish that allows the avocado halves to stand upright.)
2. Cut the avocado in half lengthwise and remove the pit. Using a spoon, scoop out a little of the flesh of each avocado half. We want the center of the avocado to be large enough to accommodate a medium-sized egg.
3. Season the avocado halves with half of the kosher salt and black pepper and place them in the prepared baking dish.
4. Place some Omega-3 ham in the center of the avocado.
5. Break each egg into a small bowl, then carefully slide the yolk, and as much as will fit from the white, into the center of each avocado half.
6. Place some grass-fed shredded cheese on top of the yolk. Then spread the Omega-3 crispy pork bacon crumples on top of the cheese.
7. Bake until the whites are set, for about 15 minutes.
8. Season the avocado egg with the remaining kosher salt, freshly ground black pepper, T-Coons Seasoning, scallions, and red pepper flakes.

Serve immediately and enjoy.
