Cheese and Broth Fondue

A great family/friends dish all will enjoy. It’s fun and adds some flare to the evening.

Broth Fondue
Ingredients:
3½ cups Grass-Fed or Omega-3 beef/chicken/pork/turkey stock
½ cup dry red wine
½ cup sliced white mushrooms
1 tablespoon garlic, minced
2 green onions, sliced

Directions:
1. Heat stock in a fondue pot until it begins to simmer.
2. Add all other ingredients, bringing it up to simmer.
3. Place individual pieces of desired meat or veggies on fondue fork and put in the pot until correct temperature (doneness) has been reached.

Cheese Fondue
Ingredients:
1 cup dry white wine
2 tablespoons almond/coconut flour
½ pound shredded Grass-Fed Swiss cheese
½ pound shredded Grass-Fed Gruyere cheese substitute with Gouda cheese
¼ teaspoon salt
¼ teaspoon ground nutmeg

Directions:
1. Bring wine to a nice simmer in the fondue pot.
2. Whisk in flour.
3. Add Grass-Fed Swiss and Gruyere (Gouda) cheeses, four ounces at a time, whisking after each addition until cheese melts.
4. Season with salt and nutmeg.
5. Place individual pieces of desired meat or veggies on fondue fork and put in the pot until correct temperature (doneness) has been reached.

Serve with any of the following suggested ingredients:
Grass-Fed Beef Sirloin Kabobs or Stew Meat,
Grass-Fed Buffalo Sirloin Kabobs or Stew Meat
Grass-Fed Boneless Lamb Stew Meat
Grass-Fed Cubed Goat
Omega-3 Pork Tips
Omega-3 Chicken Tenders or Breasts cut into bite-size pieces
Any uncooked brats cut into bite-size pieces
Any of the following cut into bite-size pieces
•    Broccoli
•    Cauliflower
•    Squash: yellow or acorn
•    Asparagus
•    Zucchini
•    Mushrooms
•    Onions
•    Sweet potatoes (Be careful they will break apart when overcooked.)
